TC #2: In The Cromwell in Vegas, they had to cook for 101 entertainers. Since Stephen had the best dish in the last ET, he could either decide the teams or the protein each team would cook (whatever he didn't pick would be given to Shelly).

ET #2: In Paris Las Vegas, the selected chefs had to cook Ramsay a steak a certain way. The winners of the first heat would sit out the 2nd & final heat.
